Melon Salsa 1

Ingredients:


1/2 small honeydew melon -- about 1 1/2 cups, -- cut into chunks

1/2 small cantaloupe -- about 1 1/2 cups, -- cut into chunks

1 medium jalapeno or serrano chile -- finely chopped

1/4 cup cilantro -- coarsely chopped

2 tablespoons fresh lime juice

1 tablespoon olive oil

1/4 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Combine all the ingredients, mix thoroughly, and set aside in the refrigerator for at least 2 hours. Use within 24 hours. Makes 3 1/2 cups. Notes: The contrast of the cool melon and spicy chile is the appeal of this salsa. Of course, season will dictate when you have the best melons available. This salsa is excellent with grilled swordfish or with Chiles Rellenos.
