CARIBBEAN SALSA

Ingredients:


2 Cup mangoes peeled and cut into 1/4 inch cubes

1/2 Cup cucumbers peeled, seeded and cut into 1/4-inch cubes

1/4 Cup fresh cilantro chopped

2 tablespoons green onions finely chopped

1/2 medium jalapeno pepper seeded and finely chopped

3 teaspoon fresh lime juice

1 1/2 teaspoon brown sugar

1 teaspoon fresh ginger peeled and minced

1 dash fresh ground black pepper
 

Preparation / Directions:


In medium bowl, combine mango, cucumber, cilantro, green onion, jalapeno, lime juice, brown sugar, ginger and pepper. Cover and refrigerate at least one hour to allow flavors to blend.
