Salmon Potato Strata

Ingredients:


1 pound canned salmon -- drained

1 medium onion -- (1/2 cup) chopped

1/2 cup celery -- chopped

4 large egg

2 cups 2% lowfat milk

1 1/2 teaspoons salt -- divided

1/4 teaspoon dried dill weed

1/8 teaspoon pepper

4 medium Idaho potato
 

Preparation / Directions:


1. In large bowl, combine salmon, onion, celery, eggs, milk, 1/2 teaspoon salt, dill and pepper; mix well. 2. Cut Idaho potatoes into thin slices. Place half of potatoes in greased 1 1/2-quart baking dish. Sprinkle with 1/2 teaspoon salt and spread half of salmon mixture over potatoes. 3. Repeat with remaining potatoes, salt and salmon. 4. Bake uncovered in 350 degrees F oven for 1 1/4 hours or until potatoes are tender when pierced with a fork. Remove from oven and let stand five minutes before serving.
