Stuffed Pepper Salad - Cook for People with Diabetes

1 medium green pepper
1/4 cup alfalfa sprouts
1 medium tomato
1/4 medium cucumber -- diced
1/4 medium yellow summer squash -- diced
1 tablespoon fat-free italian dressing

Preparation / Directions:

Slice the top off the pepper and set it aside. Clean out the membrane and seeds from inside the body of the pepper. Combine the sprouts, tomato, cucumber, and squash. Add the dressing and toss lightly. Pack the salad mixture into the prepared green pepper. Replace the pepper top and chill until ready to serve.
