Spicy Tomato And Pepper Salad

Ingredients:


4 cups tomato -- peeled, seeded and cubed (1 inch)

2 1/2 cups bell pepper -- roasted, peeld and julienned

3 cups cucumbers -- halved and sliced

2 tablespoons jalapeno chile pepper -- seeded, deveined and finely minced

1 tablespoon fresh lemon juice

2 tablespoons olive oil

1/2 teaspoon ground cumin

1 tablespoon garlic -- finely minced

2 tablespoons fresh italian parsley -- coarsely chopped

2 tablespoons fresh cilantro -- coarsely chopped

1 teaspoon salt -- to taste

1/2 teaspoon pepper -- to taste
 

Preparation / Directions:


1. In a large bowl, combine the tomato, pepper, cucumber and chili pepper. 2. In a small bowl, whisk the lemon juice, oil, ground cumin, and garlic. Pour the dressing over the vegetables and toss gently. 3. Fold in the parsley, cliantro, and salt and pepper to taste. Chill until ready to serve.
