Southern Accent Mixed Bean Salad

Ingredients:


1/4 cup black eyed peas -- dry

1/4 cup black beans -- dry

1/4 cup chickpeas -- dry

1 cup green beans

1/2 cup red pepper -- chopped

1/4 cup corriander -- chopped

1/2 cup green onion -- chopped

1/3 cup purple onion -- chopped

1/4 cup balsamic vinegar

1/2 cup oil

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


1. Soak all beans, except green beans, covered in cold water overnight. Rinse and drain. Place beans in a pot with fresh water to cover. Simmer for about 50 minutes until tender, drain. 2. Boil green beans until al dente; drain 3. Place all beans in a bowl with remaining ingredients and let sit two hours. 4. Refrigerate until chelled before serving.
