Red Cabbage Salad

Ingredients:


3/4 cup cider vinegar

1/4 cup cold water

1 teaspoon crushed dried tarragon

4 teaspoons sugar

2 cups cabbage -- shredded

1 cup celery -- finely chopped

1/2 cup onion -- chopped
 

Preparation / Directions:


Combine vinegar, water, salt, and tarragon; heat almost to a boil. Remove from heat, add sweetener, and stir to dissolve. Mix vegetables, then pour vinegar mixture on top. Toss gently several times to mix well. Cover bowl and chill for a few hours. (I didn't have red cabbage, but cabbage is cabbage
