Oriental Crab and Noodle Salad

10 ounces chinese curly noodles or
10 ounces vermicelli
8 ounces flaked imitation crabmeat
1 1/2 cups fresh snow peas or sugar snap peas
1/3 cup soy sauce
2 tablespoons dark sesame oil
2 tablespoons seasoned rice vinegar
1 teaspoon minced ginger
1/2 teaspoon minced garlic
1/4 teaspoon red pepper flakes
1 medium red bell pepper cut into short strips
1/4 cup thinly sliced green onions

Preparation / Directions:

1. Bring 3 quarts water to a boil in covered Dutch oven over high heat. Add noodles; return to a boil. Cook 2 minutes. Add crabmeat and peas; cook 1 minute or until noodles are al dente. 2. Meanwhile, to prepare dressing, combine soy sauce, sesame oil, vinegar, ginger, garlic and pepper flakes in large bowl; mix well. 3. Drain noodle mixture. Add noodle mixture and bell pepper to bowl with dressing; toss to coat. Arrange noodle mixture on salad plates; sprinkle with green onions. Makes 4 servings
