Lunar Landing Salad

Ingredients:


1 1/2 pounds potatoes (4 medium) -- cut in 1/2 inch dice

1/2 cup radishes -- sliced

1/2 cup cucumber -- diced

1/3 cup green onions -- sliced

1 1/2 tablespoons vegetable oil

2 tablespoons white wine vinegar

1/2 cup blue cheese -- crumbled

1 teaspoon salt -- to taste

1 teaspoon Coarsely ground black pepper -- to taste
 

Preparation / Directions:


Place potatoes in shallow 1 1/2-quart microwave-safe dish, cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until tender; cool slightly. In large bowl toss potatoes, radishes, cucumber, onions and oil. Drizzle with vinegar and cheese; toss again. Season with salt and pepper. Note: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.
