1/2 pound soy bean sprouts
1 tablespoon soy sauce
1/2 tablespoon sesame oil
1/2 teaspoon rice vinegar
1/2 teaspoon sugar
1 teaspoon toasted sesame seeds

Preparation / Directions:

Wash and remove the little rootlets from the ends of the soybean sprouts. Heat a pot of boiling water and plunge the sprouts into it for 2-3 minutes, taking care not to overcook them. Drain and refresh under cold water. Squeeze out excess moisture. Mix the dressing ingredients together, add to the sprouts and mix well.
