Artichoke Surprise Salad

Ingredients:


6 ounces marinated artichoke

1 small romaine lettuce -- torn

2 tablespoons roasted red peppers -- julienned

1 bunch bean or alfalfa sprouts

1/2 cup slivered almonds

1/2 cup water chestnuts

3 medium radishes -- sliced in thin circlets

2 medium green onions -- finely chopped

1/4 cup shredded mozzarella cheese

1 1/2 tablespoons white wine vinegar

1 tablespoon salad oil

1 teaspoon pepper to taster -- freshly ground

1/4 teaspoon sugar

1 small garlic clove -- crushed
 

Preparation / Directions:


Drain artichokes, reserving the marinade. In a bowl, combine artichokes, lettuce, red peppers, sprouts, almonds, water chestnuts, radish, onion and cheese. Set aside. In a jar w/ a tight fitting lid, combine the rest of the artichoke marinade, vinegar, oil, pepper, sugar and garlic. Cover and shake well. Pour dressing over salad. Toss to mix and serve. Approximately 6 minutes.
