Cucumber Salad Dressing

Ingredients:


2 ounces firm tofu -- drained

1 cup coarsely chopped unpeeled cucumber

2 tablespoons fresh lemon juice

2 teaspoons sugar

1 teaspoon vegetable oil

1/2 teaspoon salt

1/4 teaspoon dark sesame oil

1/8 teaspoon ground red pepper
 

Preparation / Directions:


Place all ingredients in a food processor; process until smooth.
