Caesar Salad Dressing

Ingredients:


2 large hard-boiled eggs

1/3 cup extra virgin olive oil

3 tablespoons fresh lemon juice

1/2 teaspoon salt

1 teaspoon Dijon mustard

1 clove garlic -- minced or pressed

1 teaspoon freshly ground black pepper -- to taste
 

Preparation / Directions:


Peel and chop the hard-boiled eggs. Place all of the ingredients in a blender and puree until smooth. Covered and refrigerated, this dressing will keep for about 5 days.
