Vegetarian Red Beans And Seven-Grain Dirty Rice

Ingredients:


2 cups brown rice

1 1/2 cups red onion -- chop

3 cloves garlic -- mince

1 cup carrots -- fine dice

1/2 cup celery -- chop

1 medium jalapeno pepper -- seed, mince

1 tablespoon cumin

1 tablespoon coriander

2 teaspoons chili powder

3 3/4 cups vegetable stock

1 piece bay leaf

1 1/2 cups red beans -- cook

1 1/2 cups tomatoes -- chop

1/2 cup corn kernels

1/2 teaspoon salt

3 tablespoons parsley

3 tablespoons cilantro -- chop
 

Preparation / Directions:


Place a medium-sized pot over medium heat. Add the first 9 ingredients and heat for 3 to 5 minutes, stirring almost constantly, until lightly browned. In another pot, bring the stock and bay leaf to a boil and add to the rice mixture. Cover the pan, lower the heat, and simmer for 15 minutes. Add the beans, tomatoes, corn, and salt. Stir, cover, and simmer for 15 more minutes, or until the liquid is absorbed. Remove from the heat and add the parsley and cilantro.
