Thai Coconut Ginger Rice

Ingredients:


1 cup coconut milk

1 cup water

1 1/2 ounces tangy coconut ginger soup mi

1 cup soft jasmine rice

1/4 cup parsley
 

Preparation / Directions:


1. in a saucepan, combine coconut milk, water and tangy coconut ginger soup mix. 2. bring to a boil. 3. add rice and stir. 4. return to a boil, stirring constantly. 5. reduce heat to low. cover and simmer 20 minutes. 6. remove from heat and let stand 10 minutes. 7. add parsley and fluff with fork. 8. serve.
