Calico Mushroom Rice

Ingredients:


2 1/2 cups water

3 pieces chicken-flavored bouillon cubes

1 cup uncooked regular rice

4 ounces sliced mushrooms -- drained

1/2 cup chopped green pepper

2 tablespoons butter

2 tablespoons chopped pimiento -- drained

1/8 teaspoon pepper
 

Preparation / Directions:


Combine water and bouillon cubes in a medium saucepan; bring to a boil. Stir in rice; cover, reduce heat, and simmer 20 to 25 minutes or until the liquid is absorbed. Remove from heat; stir in remaining ingredients. Spoon into a lightly greased 1 1/2 qt. casserole; cover and bake at 300 F for 20 minutes or until heated through.
