Minute Rice Baked Rice Pudding

Ingredients:


3/4 Cup uncooked Minute Rice (White)

2 3/4 Cup whole milk

1/3 Cup granulated sugar

1/2 teaspoons salt

1/3 Cup raisins

2 large eggs

1 teaspoons vanilla

1/4 teaspoons nutmeg
 

Preparation / Directions:


Preheat oven to 375 degrees. Combine together in saucepan 3/4 C Minute Rice, 2 3/4 C milk, 1/3 C sugar, 1/2 teasp salt, 1/3 C raisins. Bring to a boil, stirring constantly. Reduce heat and simme 10 minutes stirring occasionally. In 1 quart casserole dish stir together 2 slightly beaten eggs, 1 teasp vanilla, 1/4 teasp nutmeg. Slowly stir in rice mixture, blend well. Set casserole dish in a pan of hot water and place in center of oven. Bake 25-30 minutes or until top is set. Cool at least 1 hour before serving.
