Prawns Madras

Mildly spicy and tangy dish, best eaten with flavoured rice like Pilaf, Buttered Rice or Naan bread.
 

Ingredients:


12 medium prawns - cleaned and deveined

5 medium red tomatoes - chopped roughly

3 medium green chillies - seeded and cut into strips

1 cup cooking oil

1 large yellow onion - cut into rings

1 teaspoon chili powder

1 teaspoon mustard seed

1/2 teaspoon corriander powder

1/2 teaspoon cumin powder

1 teaspoon tumeric powder

1/2 cup thick cream

1 cup water

1 teaspoon salt

1 tablespoons sugar

---Blend together:

1/2 large onion

4 cloves garlic

5 slices ginger

6 pieces almonds
 

Preparation / Directions:


Heat a cup of oil in a frying pan. Season prwans with salt, sugar and tumeric. Fry prawns till it just turns red, drain and set aside. Remove hot oil from pan and leave about 3 tablespoons. Fry blended ingredients and bay leaf till fragrant Add chilli powder, all spices and mustard seeds and fry for about minute. Add chopped tomatoes and continue frying till tomatoes are well mixed. Turn heat to low, add water and cream and bring to boil. Keep stirring so that sauce will not curdle. Add salt and sugar to taste. Add prawns and toss well. Garnish with green chillies.
