a delicous concoction of beef, fried onions and potatoes all cooked on the stove top with plenty of salt and pepper and parsley this is cooked in a heavy pan with a tight fitting lid with a small amount of stock or water
 

Ingredients:


5 kilograms potatoes sliced into about 3mm slices or rounds

1 kilograms peeled white onions or brown cooking onions finely sliced

1 kilograms leftover roast beef ( pot roast is fine )

1 teaspoon salt and pepper

1 teaspoon freshly chopped curly parsley
 

Preparation / Directions:


heat a small amount of vegetable oil in a pan and add onions to slowly cook over moderate heat for ten minutes then add potatoes and sliced beef give everything a good stir and season really well i usually add a pint or so of beef stock or water is fine then slowly braise on stove top for 3/4 hour or 1 hour
