NEW POTATOES IN PARSLEY-BUTTER SAUCE

Ingredients:


3/4 pound unpeeled new potatoes -- scrubbed (about 5 small ones)

4 cups water

3 tablespoons butter

1 1/2 teaspoons dried parsley flakes
 

Preparation / Directions:


Boil potatoes in the 4 cups water over moderate heat (about 250 F) until potatoes are fork-tender, about 30 to 35 minutes. Melt butter over moderately low heat (about 225 F) in a saucepan. Stir in parsley. Heat 1 to 2 minutes more; pour over drained and cubed potatoes. Toss gently.
