SKILLET VEGETABLE PORK CHOPS

Ingredients:


4 chops pork chops -- (3/4 inch thick)

1 teaspoon salt and pepper

1 teaspoon vegetable oil

1 can whole tomatoes -- undrained (16 oz.)

1/2 cup uncooked quick cooking rice

4 medium green pepper rings
 

Preparation / Directions:


Lightly sprinkle pork chops with salt and pepper. Heat oil in a skillet over medium high heat; brown pork chops on both sides. Reduce heat. Drain tomatoes, and add liquid to pork chops. Coarsely chop tomatoes, and add to pork chops; stir in rice. Place a green pepper ring on each chop. Cover and simmer 40 to 45 minutes or until chops are tender.
