Polynesian Pickled Pork

Ingredients:


1 pound boneless pork loin

1 cup rice vinegar

2 cloves garlic

6 medium dried red chile

1 piece bay leaf

2 teaspoons kosher salt

6 whole clove

1/4 teaspoon thyme

1/4 teaspoon sage

2 teaspoons peanut oil

2 medium red potato
 

Preparation / Directions:


combine pork, vinegar, garlic, chiles, bay leaf, salt, cloves, thyme, and sage cover and chill for 2-6 days, stirring occaisionally transfer to a saucepan, over a moderate flame bring to a boil, reduce heat, and simmer for 25 minutes remove from heat and drain well heat oil in a large skillet, over a moderate flame add pork and fry until well browned remove with a slotted spoon to drain add potatoes and fry to the desired consistency drain on a cooling rack and blot with paper towels add pork and fry until heated through remove to drain well arrange in a serving dish serve hot
