Ingredients:

1 1/4 cups graham cracker crumbs

7 tablespoons butter -- melted

7 large egg yolks

3/4 teaspoon cream of tartar

2 cans sweetened condensed milk -- (14-ounce)

3/4 cup nellie and joes key west brand lime juice

8 ounces whipped cream for garnish

Preparation / Directions:

Preheat the oven to 350 degrees. In a small mixing bowl, stir together the graham cracker crumbs and the melted butter until well-blended. Spray a 9-inch pie pan with nonstick cooking spray; press the crumb mixture firmly over the bottom and sides of the pie pan. Set aside. In a medium mixing bowl, whip the egg yolks until foamy, about 3 minutes. Add the cream of tartar and condensed milk and blend for about 1 minute. Pour the lime juice into the egg yolk mixture and mix for 1 minute. Pour the filling into the prepared pie crust. The liquid should reach the top of the pie pan. Bake in a preheated oven for 20 minutes. Cool for 15 minutes and then refrigerate until ready to serve. Serve garnished with whipped cream.
