Light Pumpkin Pie

Ingredients:


1/2 cup sugar

1 1/2 teaspoons pumpkin-pie spice

1/2 teaspoon salt

1/2 cup skim milk

2 large egg whites

1 large egg

29 ounces mashed cooked pumpkin -- (1 can)

1 crust unbaked 9-inch deep-dish pastry shell
 

Preparation / Directions:


Combine first 7 ingredients in a large bowl; beat at low speed of a mixer until smooth. Pour into pastry shell. Bake at 425 degrees for 50 minutes or until a knife inserted in center comes out clean, and let cool on a wire rack.
