Maine Shakers Cider Pie

Ingredients:


1/2 cup boiled cider = 2-c. boiled down to 1/2-c.

1 tablespoon butter

1 cup brown sugar

1/4 cup water

1/4 teaspoon salt

2 large egg yolks well beaten

2 large egg whites stiffly beaten

1 crust unbaked 9 inch pie shell

1 teaspoon nutmeg
 

Preparation / Directions:


Place reduced cider in saucepan, add butter, sugar, water and salt. Simmer several minutes. Cool slightly and add beaten egg yolks. Fold in stiffly beaten egg whites. Pour into unbaked pie shell. Dust with nutmeg and bake in moderate oven, 350 degrees for 20 to 30 minutes until crust is browned and custard well set.
