Honey Raisin Pie

Ingredients:


1 1/2 cups raisins

1 tablespoon grated omnge rind

1 cup orange juice

4 tablespoons lemon juice

3/4 cup honey

2 tablespoons bufter

1/2 teaspoon salt

4 tablespoons cornstarch

3/4 cup cold water

1 crust pastry for double crust -- (9 inch)
 

Preparation / Directions:


Rinse and drain raisins. Combine with orange rind and juice, lemon juice, honey, butter, salt, and cornstarch that has been moistened in the cold water, and stir until blended. Bring to a boil and cook and stir until mixture thickens, (about 3 or 4 minutes). Pour into pastry-lined pie pan, cover with top crust. Bake in a mod- erately hot oven (425 F.) 30 to 35 min- utes. Cool before serving.
