Grand Champion Pie

Ingredients:


4 large eggs

1 1/2 cups applesauce

3/4 cup packed brown sugar

3 tablespoons all-purpose flour

1 teaspoon grated lemon rind

3 tablespoons lemon juice

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 crust baked 9-inch deep dish pie shell

1 medium apple -- peeled, thinly sliced

1 tablespoon lemon juice

1/4 cup apricot jam
 

Preparation / Directions:


Mix eggs, applesauce, brown sugar, flour, lemon rind, 3 tablespoons lemon juice, salt, cinnamon and nutmeg in large mixer bowl. Pour into pie shell. Bake at 450 degrees for 15 minutes. Reduce oven temperature to 300 degrees. Bake for 45 minutes longer or until knife inserted near center comes out clean. Cool slightly on wire rack. Combine apple slices and 1 tablespoon lemon juice in bowl; mix well. Arrange apple slices pinwheel-fashion over top of baked pie. Melt jam in small saucepan over low heat, stirring constantly. Brush apple slices with melted jam. Place pie on rack in broiler pan. Broil 6 inches from heat source for 3 minutes or until apples are tender and jam is bubbly.
