Marinated Green Beans

Ingredients:


4 gallons baby green beans -- or French cut

1/4 package salt

4 cloves garlic

4 cups white vinegar

1 1/2 tablespoons sugar

2 tablespoons olive or canola oil
 

Preparation / Directions:


Put washed beans in a basin. Sprinkle with salt and mix with your hands. Cover with a tea cloth. Put a board and weights on top. Leave 12 hours. Turn. Leave another 12 hours. Wash, rinse and drain the beans. Boil 8 cups water with 4 cups vinegar. Add beans and garlic and boil 10 minutes. Add sugar near end of boiling. Drain. Put in a bowl. Cool two hours. Remove garlic. Mix with oil. Pack in jars firmly. Cover with oil and seal.
