Oriental Peanut Noodles

1/2 cup wish-bone italian dressing
2 cups bok choy -- coarsely chopped
1/2 cup sliced green onions
1/4 cup peanut butter
2 tablespoons brown sugar
2 teaspoons soy sauce
1 teaspoon finely chopped coriander -- (cilantro) or parsley
6 ounces cellophane noodles -- vermicelli or angel hair pasta, cooked and drained

Preparation / Directions:

In 12-inch skillet, heat Italian dressing and cook bok choy with green onions over medium heat, stirring occasionally, 5 minutes or until crisp-tender. Stir in peanut butter, sugar, soy sauce and coriander. Toss with hot noodles and top, if desired, with toasted sesame seeds and additional sliced green onions. Makes about 4 side-dish servings. *Variation: Use 2 cups shredded green cabbage. Also terrific with Wish-Bone Robusto Italian or Lite Italian Dressing.
