Preparation / Directions:
1. Melt butter in 9- or 10-inch skillet with ovenproof handle. (To make ovenproof, wrap aluminum foil securely around handle.)
2. Arrange apples in single layer in butter.
3. Combine 2 tablespoons brown sugar and cinnamon; sprinkle over apples.
4. Cook over medium-high heat, stirring frequently, until apples are slightly soft, 5 to 6 minutes.
5. Beat egg, milk, flour and salt; pour over apple mixture.
6. Bake in preheated 450 F. oven 8 minutes.
7. Remove from oven; sprinkle remaining sugar over pancake.
8. Return to oven; reduce heat to 3750 F. and bake until evenly browned, 8 to 10 minutes.
9. Loosen pancake around edges; cut into wedges. Serve alone or with sweetened whipped cream.
