Blueberry-Cottage Cheese Dessert Pancakes

Ingredients:


4 large eggs -- well beaten

1 1/2 cups cottage cheese -- sieved

1/2 teaspoon salt

1/4 cup sugar

1 teaspoon pure vanilla extract

1/2 cup all-purpose flour

1 cup fresh or frozen dry-pack blueberries
 

Preparation / Directions:


Makes twelve 3-inch pancakes 1. Combine all ingredients except blueberries and beat until smooth; fold in blueberries. 2. Drop 1/4 cup at a time onto lightly greased griddle; brown on one side, turn and brown on other side. 3. Serve hot with sauce.
