Barley Pancakes

Ingredients:


1 cup barley

1 cup fresh green beans

1 small onion

1 teaspoon capers

1 large egg

1/2 cup shredded yellow cheese

1 cup bread crumbs

4 tablespoons olive oil -- (4 to 6)

2 teaspoon salt

1 dash pepper

4 1/2 cups water
 

Preparation / Directions:


a. Bring two and a half cups of water to a boil, add in the barley and one teaspoon of salt, then simmer for forty minutes; b. Drain and chill the barley. Discard the water; c. Cook the beans in the rest of the water for five minutes, add the salt, then drain well; d. Mince the beans, the capers, and the onions; e. Mix together the beans, the onion, the barley, the capers, the egg, the cheese, and the pepper; f. Heat up the olive oil in a skillet; g. Take a scoop of the barley mixture, coat it with the bread crumbs, flatten it, and then fry it until golden brown on both sides; h. Repeat the procedure until all the pancakes are prepared.
