Mushroom And Onion Egg Bake

Ingredients:


1 tablespoon vegetable oil

4 medium green onions chopped

4 Ounces mushrooms sliced

1 Cup lowfat cottage cheese

1 Cup sour cream

6 large eggs

2 Tablespoons all-purpose flour

1/4 Teaspoon salt

1/8 Teaspoon ground black pepper

1 Dash hot pepper sauce
 

Preparation / Directions:


Preheat oven to 350 degrees. Grease shallow 1-quart baking dish. Heat oil in midium skillte over medium heat. Add onions and mushrooms; cook until tender. Set aside. In blender or food processor, process cottage cheese until amost smooth. Add sour cream, eggs, flour, salt and pepper and hot pepper sauce; process until combined. Stir in onions and mushrooms. Pour into prepared dish. Bake about 40 minutes or until knife inserted near center comes out clean.
