Vidalia Onion Special

Ingredients:


1 pound long pasta

3 large vidalia onions

10 medium mushrooms -- up to 12

14 ounces chicken stock - low sodium

1 cloves garlic - chopped -- up to 2

1 tablespoons fresh parsley

1 tablespoons herbs - depending on your pantry -- (dried oregano, thyme or basil)
 

Preparation / Directions:


1. Bring water to a boil - add pasta, cook until al dente 2. Saute onions until golden (with a little olive oil and butter) 3. Remove oinons, saute mushrooms, add garlic for 1 min - remove from pan 4. Add chicken stock and herbs. Cook on med-low 10 minutes. 5. Add onions and mushrooms and drained pasta. Cook for 1 minute. 6. Serve Optional - thinly sliced thickcut pork chops. Sauteed and added to top of pasta. Don't cook in brot
