Thin-Sliced Mushrooms (Funghi Trifolati)

Ingredients:


2 pounds cultivated mushrooms

1 clove garlic chopped

2 tablespoons butter

3 tablespoons olive oil

1 teaspoon salt

1/2 medium lemon -- juice of

6 sprigs parsley -- chopped
 

Preparation / Directions:


Clean mushrooms, wash and slice thin. Saute garlic in butter and oil until wilted. Add mushrooms (no water is needed since the mushrooms contain enough moisture). Sprinkle with salt, add lemon jucie (which keeps mushrooms from turning black). Watch carefully, for just a few minutes is enough to complete cooking. Sprinkle with chopped parsley. Serve in preheated serving dish to keep mushrooms good and hot.
