Mini Muffin Cup Pecan Pie

Ingredients:


---CRUST---

1 stick oleo

3 ounces cream cheese

1 cup sifted flour

1 dash salt

---FILLING---

1 large egg -- slightly beaten

3/4 cup brown sugar -- (packed)

1/2 teaspoon vanilla

1 cup chopped nuts

1 tablespoon melted oleo

1 dash salt
 

Preparation / Directions:


Crust: Mold into 24 balls about 1 1/2 inch. Drop balls into small muffin pan and spread. Filling: 1 teaspoon mixture into each shell. Bake at 350 degrees for 15 minutes. Then reduce oven to 250 degrees for 10 minutes. Cool slightly in pan. These freeze very well.
