Hot Jarlsburg Muffins

Ingredients:


1 cup all purpose flour

3/4 cup yellow cornmeal

3 tablespoons sugar

4 teaspoons baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup salad oil

2 large eggs beaten

1/4 cup chopped red bell pepper

1 cup shredded jarlsburg

1/4 cup chopped green chilies -- well drained

1/2 cup finely chopped salami
 

Preparation / Directions:


Preheat oven to 425 degrees. In medium bowl, mix flour, cornmeal, sugar, baking powder and salt until well incorporated. In another bowl, mix together milk, oil and eggs. Add to dry ingredients. Mix in bell pepper, cheese and chilies. Add salami and stir until moist. Grease twelve 2 1/2 inch muffin pan cups. Spoon batter into muffin pan, about 3/4 full. Bake until done. Test with toothpick. Remove muffins to rack . Serve warm. Approximately 20 minutes.
