Carrots Vichy

Ingredients:


8 ounces peeled baby carrots

2 tablespoons water -- * see note

3 cloves garlic -- smashed

2 tablespoons butter

1 teaspoon freshly ground pepper -- to taste

1 tablespoons chopped parsley
 

Preparation / Directions:


(more will be needed if cooking on stove) Microwave the carrots with a little bit of water until not quite tender (ca 4 minutes in my microwave). Melt the butter and saute the garlic until fragrant. Add the carrots and simmer until rewarmed and just barely tender. Add pepper and parsley.
