Quick Pork And Bean Stew

Ingredients:


1 tablespoons olive oil

2 medium Onions -- quartered

2 1/4 pound lean leg of pork -- cubed

1 pound can chopped tomatoes

1 pound red kidney beans rinsed and drained

1/4 Pint vegetable stock

1 teaspoon salt and freshly ground black pepper
 

Preparation / Directions:


Heat the olive oil in a pan, add the onions and cook for about 8 mins until just beginning to brown. Add the pork to the pan and cook over a high heat for about 15 mins until the meat is browned on all sides. Stir in the tomatoes, beans and stock. Bring to the boil and simmer for 20 mins. Season and serve with jacket potatoes and stir-fried shredded vegetables.
