Ww-Hearty Lentil Soup

Ingredients:


3 ounces uncooked lentils

2 cups water

6 ounces pared potatoes -- diced

1/2 cup onion -- diced

1/2 cup carrots -- diced

1/2 cup celery -- diced

2 packages instant beef broth and seasoning mix

2 tablespoons chopped fresh parsley

1 clove garlic -- minced

1 piece bay leaf

1/8 teaspoon ground cinnamon
 

Preparation / Directions:


In 2-quart saucepan combine lentils and water and bring to a boil. Reduce heat, cover pan, and let simmer until lentils are tender, about 20 minutes. Add remaining igredients to lentils and stir to combine; cover and cook over low heat until potatoes are tender, 20 to 30 minutes. Remove bay leaf before serving.
