Tuna Ki Kari - Curried Tuna

Ingredients:


1 1/2 tablespoons vegetable oil

2 ounces onion -- cut into half rings

1 clove garlic -- very finely chopped

1 teaspoon curry powder -- as bolsts hot

6 ounces good quality oil packed tuna -- undrained

1 medium fresh hot green chili -- cut into fine rounds

1 piece ginger root -- peeled, julienned

3 tablespoons coriander leaves -- chopped

1 teaspoon salt and pepper -- to taste
 

Preparation / Directions:


Put oil in non stick frying pan and set over medium-high heat. When hot, put in onion and garlic. Stir-fry until onion turns brown ant edges. Add curry powder; mix. Add tuna; mix well. Turn heat to low and add green chili, ginger and coriander; mix. Check for seasoning; mix and turn off heat. Serve hot or cold. As a sandwich filling, puff pastry filling, pasta salad.
