Grilled Peaches With Vanilla Ice Cream

Ingredients:


2 tablespoons canola oil

1 tablespoon brown sugar

1/4 teaspoon ground cinnamon

4 medium fresh ripe peaches -- halved, pitted

1 pint vanilla ice cream

1 bunch fresh mint sprigs -- (optional)
 

Preparation / Directions:


Prepare barbecue (medium heat). Mix oil, brown sugar and cinnamon in small bowl to blend. Brush over cut side of peaches. Grill peaches, cut side down, until golden, about 3 to 5 minutes. Transfer peaches to cutting board and cut into thick wedges. Arrange in glass serving dishes. Top with ice cream. Garnish with mint, if desired. Prep Time: 10 minutes Cook Time: 5 minutes Makes: servings This recipe also works well with nectarines. For a lower fat version, replace the ice cream with low-fat yogurt, or just omit it altogether.
