Crusty Ham And Swiss Toasts

Ingredients:


1 cup finely shredded swiss cheese

4 ounces ham -- finely diced

1 small onion -- minced

1/3 cup mayonnaise

1/4 teaspoon black pepper

32 loaf french bread slices 1/4-inch thick *or*

8 slices white bread cut in fourths

1 tablespoon chopped fresh parsley or chives
 

Preparation / Directions:


In a small bowl, stir together the Swiss cheese, ham, onion, mayonnaise and pepper. Using a metal spatula, spread a heaping teaspoon of the cheese mixture over one side of each slice of bread. Place on a baking sheet. Sprinkle with the parsley or chives. Bake on the top rack of the oven at 375'F for 12-14 minutes, until golden. Serve immediately. TEST-KITCHEN HINTS: Store the cheese mixture in the refrigerator covered, for up to 3 days. For brunch or a light lunch for 6, spread the cheese mixture over one side of 6 toasted slices of rye bread; bake to melt the cheese. Serve as open-faced sandwiches with side salad
