Lebanese Grilled Eggplant

Ingredients:


1 medium eggplant -- sliced 1/2 inch thick

1/2 cup Italian dressing
 

Preparation / Directions:


About an hour before you light the grill, slice the eggplant and place it in a colander in the sink.. When you start the fir, marinate the eggplant in the Italian Dressing. I use a large zip locked bag. When the fire is hot, grill eggplant until soft and nicely browned. Serve with yogurt.
