Hot Smoked Lobster Sandwich

Ingredients:


4 medium lobsters - -- (1 1/2 lbs ea), -- killed, meat removed from claws and tails

2 large ripe red tomatoes -- sliced 1/4 inch thick

2 large ripe yellow tomatoes -- sliced 1/4 inch thick

1 large sweet onion -- sliced 1/4 inch thick

1 medium avocado -- sliced

2 tablespoons mayonnaise

1/4 teaspoon ancho chili powder

1 medium lemon -- juice of

1 teaspoon salt -- to taste

1 teaspoon freshly ground black pepper -- to taste

4 loaf sourdough baguettes
 

Preparation / Directions:


Prepare a wood or charcoal grill and let it burn down to embers. Grill lobster meat for 15 minutes or until cooked. In a small mixing bowl combine mayonnaise, Ancho powder and lemon juice. Season to taste with salt and pepper. On the baguettes spread mayonnaise and layer tomatoes, onion and avocado. Add lobster. Serve immediately.
