Pineapple-Jalapeno Marmalade 1

Ingredients:


3/4 cup fresh pineapple -- finely chopped

3/4 cup orange marmalade

2 tablespoons sliced pickled jalapeno peppers -- minced

1 tablespoon pickled jalapeno juice

1 tablespoon pimiento or red bell pepper -- minced

2 teaspoons fresh lime juice

1/2 teaspoon salt

1 tablespoon fresh cilantro -- chopped
 

Preparation / Directions:


Place all ingredients in small bowl and mix together well. (Can be made 1 day in advance). Remove from refrigerator 1 hour before serving. Makes about 1 1/2 cups. Adjust jalapeno pepper slices to taste.
