Roasted Mango with Brown Sugar-Orange Topping

2 medium ripe mangoes, halved lenghthwise, pitted
2 tablespoons brown sugar
2 tablespoons flaked coconut
2 teaspoons finely shredded orange peel
2 teaspoons finey chopped crystallized ginger

Preparation / Directions:

Place mango halves in a 2-quart rectangular baking dish. Combine brown sugar, coconut, orange peel, and crystallized ginger. Sprinkle over mango halves. Bake in a 425 F oven about 10 minutes or till mango is heated through and topping just begins to brown.
