Spiced Apple Bake

Ingredients:


2 tablespoons lemon juice

4 cups sliced cooking apples -- pared cored

1/2 cup brown sugar

1/4 cup cream of rice

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ginger

1/4 teaspoon salt

1 tablespoon vegetable oil -- optional
 

Preparation / Directions:


Mix lemon juice with apples, then add sugar, cream of rice, spices and salt; mix lightly but well. Place in a lightly oiled deep 1 quart baking dish. Sprinkle with vegetable oil. Cover and bake in a preheated 350 degree oven 1 hour. Remove cover for last 5 minutes of baking. Serve warm or cold. Makes 4 servings.
