Speedy Fruit Compote

Ingredients:


1/4 medium pear -- peeled and chopped

1/4 medium orange -- peeled and chopped

1/4 medium apple -- peeled and chopped

1 tablespoon dehydrated cranberries

1 tablespoon unsweetened orange juice
 

Preparation / Directions:


Combine all ingredients in a small microwave-safe bowl. (You may substitute raisins, dried apricots, or dried pineapples for the cranberries.) Cover with plastic wrap and microwave on high for 3 minutes. For extra flavor, sprinkle with cinnamon or 2 tablespoons crushed, whole-grain cereal.
