Preparation / Directions:
Mix pistachios, raisins, 2 Tbsp. apple juice concentrate, vanilla, cinnamon
and nutmeg; reserve.
Remove apple core with a melon baller; do not break through the bottom of
the apple. Fill each apple
with pistachio filling. Arrange apples in a shallow pan. Bake apples at 375
F basting once, until apples
are barely tender when pierced with a knife; about 20 minutes. Mix yogurt
and honey to make a
sauce; serve over warm apples. 287 calories per serving. 5 g fat.
15% fat. You can also
cook these in the microwave: Prepare apples as directed above. Cover dish
with plastic wrap and
microwave on HIGH 4 to 7 minutes, until apples are barely tender. Let stand
covered 2 minutes.
Serve warm with sauce.
